The perfect "Texas " food restaurant?

What?
1/3 Steak/ smoked meats: Porterhouse, T-bone, brisket, etc;
1/3 Mexican: tacos, tamales (especially at Christmas time), etc;
1/3 Southern: meatloaf, biscuits and gravy, sweet potato pie, etc.
With some venison sausage and rattlesnake thrown in as seasonal add-ons to the menu.
Anything I am missing?
