I'm hesitant to post this but Eater just put it out a couple weeks ago. Go to Carnitas Lonja as soon as you are able. It's a destination worthy establishment. It's a simple place and they serve 1 thing; carnitas. But the guy that makes it is an artist. He has an abuela in the back making the tortillas and they on their own are a revelation.
Eater made this point which I think is 100% accurate; what they are doing is very similar to what you see in Japan. Small restaurants that serve 1 or 2 items but they do those two things so well, it doesn't matter.
Anyway, it's a really special place. I recommend going during the week at lunch.
