We should try and make this happen IMHO.
The guy knows how to evaluate and develop OL better than anyone and we need that right now in the worst way (obviously).
Watson can stay on to coach the QBs and help transition the players to Sherman's Offense (bridge with terminology and route concepts).
He's had far more success than our current OC and I think he'd be available.
