Tips on cooking Pizzas on L BGE?

Basic Ingredients:
- Dough: "00" or Semolina Flour (White Flour Matters)
- Tomato Paste: San Marzano Tomato (canned and add tbsp. Olive Oil and garlic)
- Mozzarella: not low fat - (Where can I get a high end Mozzarella, or does it matter?)
Big Green Egg Configuration:
- Clean ash out (maximize airflow to get hot)
- put in new coals
- light fire with lid open until fire spreads
- put lid down until heat gets to 600-700
- put plate shield, grill and pizza stone down and close lid again until heat is back to 600-700
- Use Pizza Peel with corn meal coating to move pizza onto oven
- Cook for 5-7 minutes
Lessons Learned:
- Buy a Pizza Peel and spread corn meal crumbles to allow dough to slide off peel and onto grill. Otherwise you end up with a sloppy Calzone.
- Put plate shield down, grill down and pizza stone on top of grill - preheated
- It's not plugged in, so my circuit breakers are safe.
