An important and random reminder.

Here a reminder that we all know but caution slapped me in the face today.

Memorial Day I cooked fresh cut fries in expensive ass avocado oil so I wanted to save it and use it again for something over the next couple days. so today I’m going to cook some chimichangas, everyone likes Chimi’s So. Here we go … Well, even though the cast iron pot was covered with a lid, some water from the DFW storms got into the pot on Tuesday’s high wind/rain.

I realize this is a unique situation that may never happen to anyone again but still, I didn’t see the risk like I should have. The oil had small quarter size water spots on the bottom on the cast iron pot, hardly noticeable. Once I heated it up the explosion of hot oil spread in a 15 feet radius . I wouldn’t get close enough to turn off the gas. chaos continued. Oil was flaming up at the pot from all the splashes. Bad situation for an outdoor kitchen.

I ran to my gas meter and turned the cutoff valves, it was a complete mess.
