Smoking 2 racks of baby backs today. They are dry brining right now and I am going to slap them on the smoker when I get home from church around noon.
Do you guys use the 2-2-1 method? I'll be cooking at 225*.
Also, when you wrap them, do you individually wrap each rack, or do you put both of them in an aluminum dish and then put foil over the top?
