Reading Franklin's new book on BBQ. Great attention to detail. Excellent personal story, Says he uses only prime from certified Angus beef. Hard to believe with the amount of brisket he goes through. With only two briskets per animal it is hared to believe enough prime briskets can be produced. I know the beef world has changed and there is a much higher demand for prime than there was 30 years ago, but still.
Also says he wet ages them in their cryovac bag. Aging beef does it make it more tender because it is in the process of rotting.
