One of my favorites. You yankees out there sticking your nose up at kings, y'all are dipshits.
Now, it does need to be fresh and doesn't freeze well, but it's pretty damn solid fresh and fried or cut into thick steaks and grilled over a very hot fire with plenty of lemon.
It's not quite as good as its close relative, wahoo, but it's overlooked and shit on for no good reason.
That being said, no Gulf fish beats a ling or a barrelfish.
1 cup flour
1 teaspoon baking powder
1 egg
1 cup light beer

Batter
